However, by utilizing environmentally-friendly methods and avoiding harmful chemicals, Ampelon is able to maintain the perfect balance that old vines produce. Although this method is costly, it ultimately results in a smaller yield per hectare, but with a higher quality of ripened grapes, leading to an exceptional level of flavor, structure, and refinement.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003e\u003cmeta charset=\"UTF-8\"\u003eIn the cellar, Ampelon focuses on respecting the grapes after putting great effort into the vineyards. Fermentation and aging take place in either stainless steel or wooden barrels, with a long maceration period and aging time of 12-24 months. The red wines Passo alle Sciare DOC and Sciaracauda Nerello Mascalese Sicilia IGT are only bottled after a thorough tasting process.
